You will quickly discover that the slow cooker is a woman’s best friend. It allows her to prepare a hot nutritious meal for her family while leaving her hands, mind, and time free for other things until dinner is due to be served.
With that in mind, here is a wonderful slow cooker recipe that I picked up in the grocery store a long while back. It continually delights our family’s taste buds.
2 lb boneless skinless chicken breasts (bone-in works as do other chicken parts)
1 medium onion, chopped
2 teaspoon salt (do not increase this amount)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground allspice
1 can frozen orange juice
2 teaspoon orange rind, grated
1 cup sugar
1 lb cranberries, fresh or frozen
–can substitute 3/4 cup dried cranberries pre-soaked in warm water for 30 minutes. Drain cranberries. Discard water. Reduce sugar to 3/4 cup if cranberries contain sugar.
Brown chicken, onion and salt in oil.
Add browned chicken, onions, and other ingredients to slow cooker.
Cover and cook on LOW 5 1/2 to 7 hours, or whatever is the norm for your cooker.
To thicken the sauce, remove the meat from the crock pot. Pour the liquid into a sauce pan. Mix together 2 tablespoons cornstarch into 2 tablespoons cold water and add to the liquid. Cook over a low to medium heat stirring often until sauce thickens.
This dish goes great with ginger rice.
